About Your Innkeepers

Joseph and Valerie McCarthy

Joe and Val met in 1998 while working for a robotics manufacturer and integrator in suburban Detroit, Michigan.  They married two years later, and began their adventure together traveling throughout Europe, Latin America, and the Caribbean while continuing to work in the automotive/heavy machinery industries.  During their travels, they dreamed of owning and operating a Bed & Breakfast in a pleasant locale away from the snow and congestion of the city.  When the opportunity arose to move to South Carolina, they realized that it offered a life-changing chance to pursue their dreams.  While Val continued to work in the heavy machinery industry, Joe, already an excellent cook, pursued a degree in culinary arts, becoming a serve-safe certified chef.  In late August 2016, they purchased the existing Carolina Oaks Bed & Breakfast Inn, welcoming their first guests in early October.  They look forward to making many more guests feel right at home, introducing them to the sweet air and multitude of fun, educational, and relaxing activities available in the heart of North Augusta and in the surrounding areas.

Joseph McCarthy

Professional Chef/BBA/Certified Culinarian

Joseph is a chef at a local restaurant, the French Market Grille, serving cajun and seafood dishes.  A first-generation American, Joe grew up just outside of Detroit, and worked at a French restaurant and in catering while still in school.  His love of cooking was set aside for many years while he worked in the automotive robotic equipment industry, but the recent move to South Carolina allowed him to dive back in.  His hobbies include fruit and vegetable carving, cooking, baking, home improvement projects, disc golfing at the local parks, and walking or biking on the local Greeneway trails.

Valerie McCarthy

Controller/MBA

Valerie is the plant controlling manager at a local manufacturing facility.  She enjoys biking and walking along the Savannah river, birdwatching and alligator spotting at Brick Pond Park, and disc golfing at Riverview, Pendelton-King, and Patriots’ Park.  On rainy days, she enjoys sitting on the front porch or the back deck reading, as well as local indoor attractions such as the Augusta Museum and the Morris Museum of Art.

Franklin McCarthy

Cockapoo/Lap Dog/Disc Retriever

Frankie was born September 26, 2011 in Columbus, Michigan.  He is a very well-traveled dog, having made the journey between Michigan and South Carolina many times.  He has a hypo-allergenic coat, and with a few exceptions, is typically a very quiet dog.  However, if you invite him out for a walk, a ride in the car, or a trip to the park to go disc golfing, he is guaranteed to get excited.  For visiting canines, Frankie recommends the Pendelton-King dog park, long walks along the Greeneway in North Augusta, and fine or casual dining at a number of dog-friendly area restaurants.  Not all rooms at Carolina Oaks are dog-friendly, so he recommends that you call ahead.
